Simple Egg Rolls


In this house we are obsessed with Chinese food and instead of going to the store and spending $9 on four egg rolls at the grocery store why not make our own very simple egg rolls. No chopping, cutting, just stirring and adding in ingredients. It has amazing flavor, crunchy and you will never want to buy egg rolls every again.

Ingredients:
1 1/2 Cups Coleslaw (bagged)
2 Tablespoons Soy sauce
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1/2 Teaspoon Salt
1 Teaspoon Pepper
1 egg, beaten
12 egg roll wrappers

Instructions:
Place coleslaw, soy sauce, garlic powder, onion powder, salt, and pepper in a bowl and mix.
Spread egg wash on all edges of your egg roll wonton wrappers.
Place 2-3 tablespoons of the filling into the egg roll wrapper.
Roll up your egg roll

Place in fryer or pan of vegetable oil for 1 minute or until a golden brown.
Place on paper towel to drain and enjoy

Frito Corn Salad


So my mom told me about this recipe and let me tell you I was afraid to try it by just the name of it but do not get discouraged this "salad" is amazing.  I made this right before 4th of July weekend for a little family cook out and it was gone within minutes.  It has an amazing crunch from the corn and chili cheese fritos send amazing flavor through out the entire salad.  So on your next hot day, picnic or even pot luck make this easy recipe and enjoy it and watch it disappear.


Ingredients
 2 Cans Corn, drained
1/2 Cup chopped onion
1/2 Cup chopped green bell pepper
1 Cup Mayo
1 1/2 Cup Shredded Cheddar Cheese
10 OZ bag Chili Cheese Fritos 

Directions
Mix all ingredients together except Fritos.  Place in fridge until chilled and mix in Fritos right before you serve.

Zucchini Corn Cakes


Need a light side dish or appetizer for the summer?  Don't look anywhere else this little healthy cake is amazing.  It is so flavorful you will not want to stop eating.  Everyone in the house ate these up I think we added a new side dish to our main house menu.

Ingredients
2 Zucchini's (shredded)
1 Cup of frozen corn
1/2 Cup Shredded Cheddar Cheese
1 Tablespoon Garlic Powder
1 Tablespoon Basil
1 Teaspoon Salt
1 Teaspoon Pepper
2 eggs
3/4 flour

Instructions
Mix all ingredients together
Spray your pan and place a spoonful of mixture into pan and spread out in a circle. 
Cook on each side for 4 mins or until it is slightly brown.
Serve right away

Cheese Stuffed Mushrooms


Soft, flavorful,cheesy mushrooms what more could you ask for in an appetizer and or side dish.  These were a hit for my and my hubster well because the girls do not like mushrooms but they were amazing so more for us!  You will not be sorry when making these.

Ingredients
1 Package of Baby Bella mushrooms (around 10-12)
1/4 Cup Onion and Chive Cream Cheese *soft*
4 Tablespoons Parmesan cheese
1/3 Cup Shredded Mozzarella Cheese
1 Garlic clove minced
1 Teaspoon Onion Powder

Instructions

Preheat oven to 350*
Take stems out of mushrooms and place onto pan with tin foil
Mix the five ingredients together and stuff into mushrooms.
Bake for 25 minutes or until tops are brown.
Let set for 10 minutes (they are super hot and the juices can burn, be careful)

Bacon Risotto Stuffed Mushrooms


Creamy, cheesy and full of bacon, a risotto that is full off flavor and stuffed into a portobello, perfection!

12 oz Abrorio Rice
3 Cups Chicken Stock
4 Tablespoons Butter (separated)
1 Cup Parmesan Cheese
6 Strips Bacon (crispy and crumbled)
Portobello Mushrooms 

Place rice, stock and 2 tablespoons butter into pan.  Stir while boiling for boiling, cover and reduce heat to simmer for 20 minutes.  

Cook bacon and place into rice when rice is done cooking, salt and pepper to taste, fold in cheese and set aside.

Place 2 tablespoons of butter into pan and place mushroom in pan and cover and cook on medium heat for 10 minutes or until mushrooms are done cooking.

Stuff risotto into mushrooms and serve.

Red Lobster Cheddar Bay Biscuits


The best biscuits your taste bud laid buds on, ever.  This copy cat recipe will be worth the craving and skipping that trip to red lobster.  It is so simple and quick your friends and family will thank you.

Makes 12

2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
2 teaspoons garlic powder
1/2 teaspoon kosher salt
1 cup buttermilk
1/2 cup unsalted butter, melted
1 1/2 cups shredded sharp cheddar cheese

For the topping
3 tablespoons unsalted butter, melted
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon garlic powder

Preheat oven to 450 degrees F. 
In a large bowl, combine flour, sugar, baking powder, garlic powder, salt and cayenne pepper, if using.
In a large glass measuring cup or another bowl, whisk together buttermilk and butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Gently fold in cheese.
Using a 1/4-cup measuring cup, scoop the batter evenly onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown.
For the topping, whisk together butter, parsley and garlic powder in a small bowl. Working one at a time, brush the tops of the biscuits with the butter mixture.
Serve immediately.

Parmesan Dip


I have a chip obsession, when I feel like snacking I grab chips and I usually always have to have dip but I didn't have any so I created my own masterpiece and it turned out amazing. You will want to make this for your next gathering for sure.

1/2 Cup Mayo
1/2 Cup Sour Cream
1 Cup Parmesan Cheese
1 Tablespoon Worcestershire Sauce
1/4 Teaspoon Salt
1/4 Teaspoon Pepper

Mix all ingredients together and serve right away or place in fridge for an hour before serving.

Cream Cheese Wontons


I love Chinese  food but I am picky about it.  I grew up going to a Chinese restaurant almost every week and to the same one. Back when I was 18 the closed down the restaurant and I was so very sad.  I didn't like any other Chinese restaurant so I started making my own creations and this one is a winner.  My oldest daughter and I were fighting over them left and right and she won the last odd number one.
They are crunchy,creamy and have amazing flavor

1 block cream cheese *room temp*
1/4 Cup Green Onions *chopped*
1 Tablespoon Sugar
1 Tablespoon Worcestershire Sauce
Wonton Wrappers
1 Egg
1/2 Cup water
Oil

Heat oil 325*
Mix cheese,onions,sugar and sauce until creamy and fully mixed.
Mix egg and water together and dip edges in egg wash mixture and place 1 Teaspoon of cream cheese mixture in the middle.
Fold in half, pinch edges and pinch sides and bring into the center.
Fry until brown and crispy and drain on paper towel

Bacon Wrapped Asparagus


I have a hard time with asparagus, don't get me wrong it is good but I have a hard time "liking" it.  This recipe had so much flavor in the asparagus a picky eater like me with green veggies I was eating these like candy!

You or your company will not be disappointed.

5 asparagus per bundle
uncooked bacon 1 per bundle 
pepper
garlic powder
toothpick

Preheat oven to 375*
Wrap each bundle of asparagus with uncooked back and put tooth pick in center to help hold.
Put on aluminum foil, season with pepper and garlic powder
Bake for 20 mins or until bacon is done to your liking.

Ooey Gooey Cheese Sticks


*drool* I love cheese sticks!  These ones are ooey gooey and will melt right in your mouth if not in your hand first.  Football season is coming to an end soon and this one will be a crowd pleaser.  The whole plate was gone in my house in 10 mins and I only had one!  I might have to make more, for myself, when the family is gone....but they are never gone, maybe when they are sleeping?

Anyways make these you will not regret it! Oh and don't forget your sauce!
 A happy ending to week 4 of Appetizer month

16 Cheese Sticks Cut in half
1 Cup Flour
1/2 Cup Cornstarch 
2 eggs
2 Tablespoons Oil
2-3 Cups Panko Bread Crumbs Italian Flavored
salt and pepper

Heat oil to 350*

Cut all of your cheese sticks in half and put on a baking sheet cover and put into freezer for 2 hours or until fully frozen.

Mix your eggs and oil until combined well and mix together your flour,cornstarch,salt and pepper on a plate together.  Put your crumbs on a separate plate as well

 Put your cheese sticks in the egg mixture then roll into flour mixture, back into egg mixture and into the crumbs.  Place into oil until brown and drain on paper towel.

If they get a little cold while in the process of frying them put them into the oven on 250* or a quick 30 secs in the microwave will help.

Crab Rangoon Dip


My favorite Chinese appetizer in a dip? Yes Please!  This dip is outrageously amazing!  I cannot wait to serve it at a party but for right now I will be eating this by myself.  I might share, I said might.  I might have to have a dip month next, I  have so many dips I want to share. 
But for now enjoy week 3 of appetizer month!


Dip
8 oz cream cheese 

½ cup  sour cream
1 (6oz) can lump crab meat, drained well
1 tsp honey
1 tsp soy sauce
1 tsp Worcestershire sauce
½ tsp garlic powder
½ tsp sugar
½ tsp salt
¼ tsp black pepper

Wonton Chips
 wonton wrappers, cut into strips
Canola Oil for frying

In a bowl mix all of the ingredients together for the dip.

Heat in a 400 degree oven for 10 minutes, or put in a small crock pot over low heat for 2 hours. Or just eat cold, your call

In a large pot, pour in 2 inches of canola oil. Heat over medium high heat, until about 375 degrees.
Working in small batches place strips of wontons into the pot. Cook for about 1 minute, turn them and cook for another 1 minute, or until lightly golden brown.

Remove to a wire rack to drain and cool before serving.

Fried Pickles


Who would have thought that fried pickles would make such an amazing appetizer! This recipe has such an amazing crunch and the taste of the pickle is still do die for!  Now you can use any kind of pickles you want, I like to use the sandwich pickles.
So here is a late week 2 of Appetizer month.  Enjoy the new way to eat a pickle.



1 cup flour
1/2 tsp salt
1/2 tsp sugar
1 tsp baking powder
1 cup water
Panko Crumbs
Pickles
oil

Put oil in pan, enough to cover pickles or use fryer

Combine the flour,salt,sugar,baking powder and water together in a medium bowl and mix until smooth.

Take out pickle and dry off with paper towel and dip into batter and then cover with Panko crumbs

Fry until brown and drain on paper towel.
