Hello all, it has been a crazy while. I am here to show you a rather simple light chicken dish that is great for after work, school, or a weekend dinner. Here in Wisconsin, the weather is starting to get a little warmer and the snow is gone. So with that being said, I wanted something in between comfort food and something light and this dinner really hit the spot. A lightly fried chicken with a hint of lemon this chicken is a great dinner. </div>

4 Boneless Skinless Chicken Breasts (Pounded thin and cut in halves)</div>

Pound out the chicken and flatten out breasts into 1/4 inch thickness. </div>

In a shallow dish combine egg, wine or chicken broth, lemon juice, garlic, and siracha. In another shallow dish combine flour, cheese, parsley, and salt. Coat chicken with flour mixture, dip in egg mixture, then coat again with the flour mixture. </div>

In a large non-stick skillet, heat up vegetable oil and brown chicken halves for 3-5 minutes on each side or until the juices run clear. Remove from pan and place on a baking sheet with a cooling rack in the oven to keep warm. </div>

When all chicken is done, take out of the oven and serve with mashed potatoes, noodles, or rice. </div>

In a large bowl, mix together butter and sugar until creamy. Add in eggs one at a time until combined. Slowly add in apple cider until it all comes together. In a separate bowl mix together the flour, baking powder, cinnamon, and salt. Mix the dry mixture a little at a time with the wet mixture until combined. If the mixture is sticky add in a little bit of flour at a time until you are able to mold the dough.</div>

Divide the dough in half on a floured surface or parchment paper. Shape each dough into a 12" log roll shape. Place each roll onto a pan with parchment paper at least 3 inches apart and flatten down the log until they are 1/2 inch in height.</div>

Bake for 15-20 minute until they are golden brown. Take out of the oven and let sit until it is cool enough to handle and place onto a cutting board and cut into 1/2 inch slices. Place slices back onto pan and back in the oven for 6 minutes, turn over and bake for another 6 minutes. Take out of oven and place onto the cooling rack and then frost.</div>

In bowl mix together butter and sugar until it is light and fluffy. Add the egg and vanilla and mix well. </div>

In a separate bowl lightly mix together flour, cornstarch, salt, and baking powder. Slowly add this mix to the sugar mixture slowly. The mixture will be crumbly. </div>

Knead the cookie mixture well until it all comes together. Place flour onto your countertop and roll dough up to 1/4 inch thick. Cut into round shapes, I used a 2-inch diameter. </div>

Place cookies 2 inches apart on sheet and bake for 8 minutes.</div>

Transfer to cookie rack, cool and frost. </div>

Slice the eggplant into round less than 1/2 inch thick, sprinkle each side with seas salt, place in a colander for 15 minutes; This will help get rid of the bitter taste the eggplant may have. </div>

Rise Eggplant off and absorb with kitchen towels for 10 minutes until eggplant is dry.</div>

Preheat oven to 400 and line a baking sheet with foil and nonstick spray. Durning this time start to prepare your noodles and sauce. </div>

Prepare your coating station: Place milk and cornstarch in one bowl; flour, salt and pepper in another bowl; and crumbs, yeast, garlic, and Italian seasoning in the last bowl. </div>

When eggplant is dry start breading, place your egg plant in flour, egg, then the crumb mixture. Place crumbed eggplant on foil and place into the oven. Take out 2-3 eggplant rounds at a time and fry until golden brown on each side; place back into the oven and grab 2-3 more. Egg plants should stay into the oven for at least 15-20 minutes.</div>

Homemade Ice Cream is my all time favorite thing and even better when it is a no churn. Make it and freeze it over night and dig in for a snack the next day. This is my all time favorite ice cream to make mostly because I am one of the only ones in my house that love fruit flavored ice cream, everyone else likes chocolate so I actually make this for myself. </div>

So this post first started about a week ago on me and my weight loss journey but then suddenly and fast on July 30th my Dad passed away in Nebraska so my writing in this "My Life" changed to "Dear Dad". I have been slowly going back and forth to writing anything about this but in the end, it is one of the only way to get it all out. </div>

My Dad, Anthony David De'Leon was born on <a href="http://rapidcityjournal.com/news/local/communities/hot-springs/obituaries/veterans/anthony-tony-david-de-leon/article_8c925104-77a3-11e7-9016-2f31a4409470.html">March 6th, 1958 and passed away July 30th, 2017</a> due to having Cirrhosis of the Liver. My relationship with my father was not ideal at all. I look at this man that I know I love but I do not know him in a way a daughter should. As my brother and I were looking for flowers to send to his service and we didn't know his favorite color, it was heart breaking. </div>

My father and mother separated when I was a few months old, my only photos and memories of my dad were when I was 8 years and up. I have a photo I will have posted below and that is the only photo I know that exists of me with my dad before the age of 8 and it looks like I was two. Anyways he took to drinking and drugs and chose that over a life of a family. As I got older (at the age of 8) we started going to Milwaukee every summer and we stayed with my Grandma Joan and would see and spend time with my Dad when he would come around. The sad thing is when I think of that amazing time in Milwaukee I remember all the times we spent with my Grandma and Grandpa, not too many of my dad. He never had a place of his own, every year when we left to Milwaukee he was renting a new room with a new family or friends, which in its own way I have great memories of meeting so many different people along the way. </div>

One of my favorite memories of my dad is one day we left from my grandma's apartment early in the A.M. and he took me around the city and all day we walked, rode the city bus, talked, ate, and had fun. We ended up being down by the beach, by rocks, down town where we could just sit and stare at the city lights and it was beautiful. We took one more bus ride and another long walk before we ended up at the place where he was living. What I don't think he ever knew was that was an amazing day for me and that is the day I fell in love with the city, he was also my first motorcycle ride; The man loved his Harleys. </div>

Oh his laugh, I could go on and on about his laugh and his voice. As a child, I use to think I would hear it in the street and get excited that he had come to visit and turn around and it wasn't him. I haven't seen my dad for almost 14 years. It was November 2004 and 1 week before I found out I was pregnant with my first daughter when I had seen him last, After this, he has moved out to South Dakota where my family basically was from. The last time I heard his voice was 2 years ago when my grandma called me for my birthday and he was there at the nursing home with her. It breaks my heart I didn't get to see him more or that we didn't talk more; Even more that he had three beautiful granddaughters he never met or got to know. I can sit here and beat myself up not trying more with my dad but in the end, I was no longer a little girl chasing after my father, I just wanted him to see me with out me trying to get his attention. </div>

He was funny, he had the most cheesy jokes, one that a grown up probably shouldn't think is funny or ones that he shouldn't be telling kids. He taught me how to hot wire a car, taught me many things about cars but I didn't listen to it all. There was a time he sat down and taught me how to chug SunnyD. Again not something you should teach your 9 year old haha.</div>

I have bad timing when I call people and this has become a thing; when I called my friend Rachel all the time I would always call while she was in the shower, it was ridiculous. It goes for everyone else I call whether it be them in the shower, just sitting down for dinner, or something bad just happened. I hate calling people because I always seem to catch them in a bad time and sadly it is what happened with my dad. Not talking to him for two years and having family update on Facebook his hospital number was. I was so nervous about calling but I knew in the back of my heart this would probably the last time, I needed to let him know that I loved him, I wanted that closure with him. I called and there was no answer. I go back on Facebook later and brother, sister, cousins, uncles and even his friends are updating on how he sounds. though out the next two days before he got bad enough where he couldn't even wake up I called, called, called, called and he never answered.....I never got to talk to my dad, I never got to tell him I love you one last time, I never got to hear his voice or laugh, there are no old home videos to go back to listen to, we both didn't get that closure. My sister made it down to South Dakota before he passed and handed all the hard stuff you have to deal with after death and she is amazing for that. She asked if I wanted to say some words to him and she would put up the phone to his ear, I didn't do it. Some days I regret it and some days I don't because I remember the day we spoke and what he had to say to me two years ago.</div>

Rub in salt and pepper onto roast and sear beef until it forms a crust on each side. Place roast into crock pot and place all other spices and beef broth over roast. Place into slow cooker on high for 4 hours or low for 6 hours. When roast is done shred and place back into juice in the slow cooker. </div>

I always have stuck with the good ol fashioned New York Style Cheesecake well because it is the best, so I was always afraid to play around with it and make anything else. Well I was in the mood for something a little sweet this week and I thought why no a cheesecake? Place the rest of dry ranch and miracle whip into a bowl and mix well. Place chicken in mixture and stir around until chicken is covered. </div>

Place a tablespoon or two of olive oil at the bottom of the pan. Place potatoes and carrots around the side of the pan, sprinkle a few more tablespoon of olive oil on top of the veggies. Place chicken in the middle of the pan. Place salt, pepper, and the rest of the dry ranch on top of the veggies. Spray the chicken with PAM if want to add color. Sprinkle Parsley on top of chicken.</div>

Mix the hot heavy cream slow and low into the egg mixture until combined.<br />Place the egg mixture back into saucepan over low heat for five minutes or until thickened, <u>do not boil</u><br />Remove from heat into bowl, stir in chocolate until melted and combined. Cover and place into fridge for two hours.<br />Take your whisk attachment and whip your remaining heavy cream until it reached stiff peaks. Take chilled and firm chocolate from fridge and fold your fresh whipping cream into chocolate mixture until smooth. </div>

This Monday also means the second semester for me, back to school until May, 10 classes, basketball ball tournaments, ballet, housework and more; back to being 100% busy. That is okay though I enjoyed my small month break off of school. I got to do lots of things with the girls during that time. Speaking of tournaments, my oldest, Mallory, has had two the past two weekends and they are long. We are usually gone for 8 hours for the games but they have won two out of three games both times and we have our last one coming up soon. It has been a great season. Anna and Lauren are doing great in ballet, we have picked out their costumes for the recital and they are now learning their dances. The memory those two have are amazing, I don't think I could remember all the dance steps. </div>

As I have stated I am on a new health adventure of losing 31 pounds by my 31st birthday in June. I have cut out all bread and potatoes and I am happy so say I am doing great and that I actually do not miss them and that is huge because my favorite food is mashed potatoes. Changing my diet has been easy, now trying to find time to continue to work out between the night time rush and homework will be interesting. I have been avoiding the scale until it hits the first of the next month. I know 31 pounds is a big goal but even if I make it to 20 I will be happy. I am doing the best I can and hoping for amazing results. </div>
