Slow Cooker Italian Beef Sanwiches


A sandwich that is quick for those busy nights, has lots of flavor, and you will be wanted to save room for a second. This is one of our many favorites quick meals that everyone actually eats and with two very picky children that is not easy. So throw everything in and enjoy a great meal after work or a long day of activities. 

Ingridients:
2 pounds Sirloin Roast 
2 Cups Beef Broth
1/2 Teaspoon Salt & Pepper
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder 
1 Teaspoon Italian Seasoning
1 Teaspoon Crushed Red Pepper 
1 Cup Diced Sweet Peppers
1/2 Cup Sliced Pepperoncini Peppers

Directions:
Rub in salt and pepper onto roast and sear beef until it forms a crust on each side. Place roast into crock pot and place all other spices and beef broth over roast. Place into slow cooker on high for 4 hours or low for 6 hours. When roast is done shred and place back into juice in the slow cooker. 
Place diced and sliced peppers into a bowl and mix.
Place Shredded Roast and Pepper Mixture onto a hoagie or steak roll.

Italian Hoagie


Well hello all long time no talk, finals are slowly happening and I have been busy doing homework and studying, where I have not been able to make anything new and it is also my worst time of year for photos because of the yellow overhead light and how it gets dark at 4 p.m., but I could not let you miss out on this one. My special guy's favorite subway sandwich "Italian BMT" so I decided to create my own and it turned out great. Just a little hit of spice, melted cheese, and a herb butter spread. If you are wanting to make something easy, quick, and delicious for lunch or supper and if you also love the Italian BMT. This sandwich is just for you

Ingredients:

6 Hoagie Buns
6 slices Mozzarella Cheese
Sliced thin: Ham
Sliced thin: Salami 
Sliced Pepperoni
1/4 Cup Pepperoncini Peppers, sliced
4 Tablespoons butter, soft
1 Teaspoon Italian seasoning
1/4 Teaspoon Garlic Powder

Directions: 
Preheat oven to 400
In a small bowl mixed together, butter, Italian seasoning, and garlic powder. Spread butter mixture on both top and bottom, inside of hoagie. Place ham, salami, pepperoni, cheese and pepperoncini onto hoagie in that order. Take a square of tin foil and roll and wrap your hoagie and place onto a pan and bake for 20 minutes. Unwrap and enjoy.

Chicken Parmesan Sliders


One of of favorite meals on a slider! As you can see my recipe is made a tiny bit healthier and that just meaning there is no breading on the chicken but trust me with it having so much flavor you won't even miss it.  Sometimes my daughters will go on my Pinterest board and blog and look through it and yell at me because "mom you haven't made this since taking this photo!"  The life of a food blogger there are so many recipes I forget about haha so when they pointed out a Parmesan recipe I thought about making it a new way.  So here we have it.

Ingredients 
2 lbs of Boneless Skinless Chicken Thighs
1 Cup Pizza Sauce
6 slices Motzerella Cheese *In halfs*
1 Packet of Rolls *12 count*
3 Tablespoons Parmesan Cheese *divided*
1 Tablespoon Thyme
1 Teaspoon Garlic Powder
1 Teaspoon Salt and Pepper

Instructions 
Preheat oven 350*

Place 1 Tablespoon of Parmesan Cheese,thyme,garlic, salt and pepper all over chicken and cook in pan until done.  

Place bottom of buns into a 9x13 pan

Place chicken onto sliced opened rolls add a spoonful of pizza sauce and a half a square of mozzarella cheese. 

Place all tops on and sprinkle the last two Tablespoons of Parmesan cheese on tops of buns.  Place into oven for 20 minutes.

Serve right away

Italian Sausage Pizza Hoagie


So it is the summer time and it has been super hot and I mean hot.  Maybe not Texas or Florida hot but when it is in the high 80s before the first day of summer it is hot for Wisconsin.  So with that I haven't made many new things except for some quick dinner that do not involve the oven or stove just the grill, but it did go back down to the 70s and I needed some more recipes for the blog so I sharing this recipe that i have never shared before and for that I am sorry.

So enjoy this flavorful Italian sausage, sauteed onion and green pepper with melted mozzarella cheese and of course what could be better than cooking it all in sauce and putting it in a hoagie?  Lots of things but that isn't the point.  This is good, make it.

Ingredients 
6 Italian Sausages *cut in rounds*
2 Green bell peppers *sliced*
1 Large Onion *sliced*
1 Jar of spaghetti sauce
Motzarella Cheese *sliced*
2 Tablespoons Butter
Hoagie Buns

Instructions
Preheat oven 325*
Place butter, onions and peppers in small sauce pan and cook on low for 30 minutes.
While that is cooking place your sauce and Italian sausages in a pan and cover and leave on med heat.  Stir occasionally for 20 mins.
When done place the amount of sausages you choose in your hoagie with some extra sauce, place some onions and peppers over the sausages and top off with cheese.  Wrap each sandwich with tin foil and place in oven for 15 minutes.  Unwrap and eat right away.

Makes 4-5

Pita Teriyaki Chicken


You will love this  simple grilled chicken with a tangy,sweet teriyaki sauce and the sweet warm pineapple that brings that it all together.  This is the perfect summer meal to grill out and eat outside and not heat up the house.  This is a have to make for your family.

Ingredients

1 Cup Teriyaki sauce
1/4 cup honey
1 Pound of chicken 
Pita bread
Lettuce *optional*

Instructions

Mix sauce and honey in a bowl together.
Place chicken in pan and pour sauce mixture over and cook for 15-20 mins until chicken is done
Or
Grill chicken and brush on sauce for 20 mins or until chicken is done
Grill or warm pineapple on pan.
Place lettuce,chicken,pineapple and some extra sauce mixture into the pita bread.
serve right away

Sweet Chili Chicken Sandwich


I could eat 10 of these, ok maybe just 2 and for breakfast lunch and dinner, i love these things.
Juicy chicken breast, spice of the sauce and the help of cucumbers to cool it down.
Everyone wanted seconds, it was a complete delicious hit.

1 lb Chicken Breast, cut in halves and pounded
1 Cup Sweet Chili Sauce
Salt and Pepper

*optional*
cucumber slices
tomato slices
lettuce

Sweet chili Mayo
1/4 Cup Mayo
2 Tablespoons Sweet Chili Sauce

Cut chicken breasts in half and pound out about 1/2 in thickness.  Salt and pepper and place into cold pan.  place 1 cup of SCS onto chicken and place heat on medium.  Cook for 15-20 minutes or until chicken is cooked through.

While chicken is cooking mix sweet chili mayo together in a small bowl.

When chicken and mayo is done place lettuce down on toasted bun, chicken, any extra sauce left in pan, tomato, cucumbers, mayo on top bun, and eat as many as you can.

Steak Sandwich



This is my all time favorite sandwich.  It is quick and the whole family will love it and great to serve guests.
You can never turn down sweet sauteed onions over steak?

  • 2 Spanish or Sweet onions, sliced thinly
  • Dash of salt
  • 5  tablespoons of butter (separated)
  • 2 pounds of boneless rib steak, sliced thinly
  • 2 tablespoons olive oil
  • Salt and Pepper to taste
  • 1 Teaspoon Garlic Seasoning
  • 1 Teaspoon Steak Seasoning
  • 2 cups mozzarella cheese
  • 4 Hoagie buns, split
Preheat your oven to 400 degrees F. Line a rimmed cookie sheet with parchment. Set aside.
Start your onions first. They will take longer than the steak. Heat 3 Tablespoons Butter until it melts, add the onions. Add a hit of salt to speed up the sweating process, and keep stirring every now and again, but not constantly. You can lower to a medium low setting if they are starting to cook too quickly. Slower is better with onions, so don't rush the process. Once the moisture is out hit them with the butter and continue cooking until they caramelize. The process should take about 15 minutes on a nice medium heat, or up to 25/30 on a lower heat. Transfer to a plate and set aside till needed.

Slice the meat as thinly as you can. It's helpful to have the meat cold during the cutting process if you're not adept with your knife skills. So you can pop it in the freezer for 15 or 20 minutes before cutting it if you like. Let the steak get to room temp before cooking.

Mix 2 Tablespoons of butter, garlic and steak seasoning together and add to a pan and melt.  Add the beef and cook while stirring it about occasionally. You can cook it to your taste. I'd recommend 3 to 5 for a medium rare, and 5 to 8 minutes for well done, which is how we like ours.
Add some salt and pepper to taste.

Butter your hoagie buns and toast them slightly on the inside by placing them on a hot skillet. Only takes about 2 minutes. Now place them cut side up on the cookie sheet.  Place on meat, onions and cheese.  Place back into oven until cheese is melted.

Patty Melt



Oh my favorite diner food buttery,greasy,burger topped with onions and swiss cheese covered with rye bred, no burger is better than this.

1 stick Butter

1 whole Large Onion,  Sliced

1-1/2 pound Ground Beef

 1/4 Teaspoon Salt

1/4 Teaspoon Pepper

1/4 Teaspoon Garlic Powder

1 Tablespoon  Worcestershire Sauce

8 slices Swiss Cheese

8 slices Rye Bread


In a medium skillet, melt 2 tablespoons of butter over medium-low heat. Throw in the sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally, until the onions are golden brown and soft.
In a medium bowl, mix together the ground beef, garlic, salt & pepper, and Worcestershire. Form into 4 patties.
Melt 2 tablespoons butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle.
Assemble patty melts this way: Slice of bread, slice of cheese, hamburger patty, 1/4 of the cooked onions, another slice of cheese, and another slice of bread. On a clean griddle or in a skillet, melt 2 tablespoons butter and grill the sandwiches over medium heat until golden brown. Remove the sandwiches and add the remaining 2 tablespoons of butter to the skillet. Turn the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until cheese is melted.
Slice in half and serve immediately!

Meatball Sliders


Meatballs are kind of a big thing in this house and they are the only form of hamburger meat my middle daughter will eat, which is just absolutely crazy in my opinion.  This is also a simple, delicious, quick and they were gone in minutes.  

1 pound Italian Sausage
1 pound ground beef
1/4 cup onion, grated
2 cloves garlic, grated
1/3 cup fresh parsley, chopped
1/3 cup plain breadcrumbs
1/3 Parmesan cheese, grated
2 eggs
1/2 cup milk
1/2 teaspoon dried red pepper flakes
1 teaspoon dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 24-ounce jars marinara sauce
dinner rolls, for serving
2 cups grated mozzarella cheese

In a large bowl, combine the onion, garlic, parsley, breadcrumbs, Parmesan, eggs, milk, red pepper, flakes, oregano, Italian seasoning, salt and pepper. Stir to combine thoroughly before adding the meat.
Then add the meat to the breadcrumb mixture.
Form the meatballs, using the size of your dinner rolls as a guide. I made mine a little bigger than a golf ball.
Preheat oven 350* and bake meatballs for 20 minutes or until done.

While Meatballs are cooking broil or toast your buns.

While the meatballs cook, heat up the marinara sauce in a saucepan on medium heat.
After the meatballs are cooked through, remove them from the oven and place them into the hot marinara sauce.
Lower the heat and simmer the meatballs for another 15 minutes.

Place one meatball onto each bun, and top each meatball with a generous sprinkle of mozzarella cheese.
Broil them at 400 degrees F for 3-5 minutes, just until the cheese is melted.
Place a bun top onto each slider, then serve.

Crispy Chicken Sandwich


So I cannot believe I have never shared this with you.  This is a family favorite of ours that we have often then I realized that it isn't on my blog!  So I apologize for the lack of this sandwich and hiding the recipe from you.  This is perfect for a lunch or quick dinner.  The flavor is amazing, it is flaky and crispy, you might never find another equally amazing chicken sandwich, well depending on your taste buds.

*Makes 4 Sandwiches*

2 Chicken breasts 
1/2 Cup Pickle Juice
1 Cup Flour
1/4 Teaspoon pepper
1 Teaspoon Garlic Powder
1/4 Teaspoon Paprika
1/4 Teaspoon Basil
1 Tablespoon Powdered Sugar
1/4 Teaspoon Seasoning Salt
2 Eggs
1/4 Cup Milk
Oil for frying
4 buns

Place chicken into zip lock bag and pour in pickle juice, let marinade for 2 hours.
Bring oil temp to 350.
Mix together eggs and milk.  Mix together flour and all spices and sugar.
Before taking chicken breast out of bag, pound them until thin.  Cut each chicken breast in half.
Place chicken breast into flour,egg wash, four and again and place into oil for 5-10 mins both sides until brown and chicken is cooked through.
Place chicken on bun with mayo,lettuce and pickles.

Breakfast Grilled Cheese


Oh I how I love our Sunday breakfast nights, I get to play around and create amazing food like this.  Now I am a fan of grilled cheese itself but you add some bacon and an over easy egg?  You are now in taste bud heaven where you float up to the melting cheese clouds, okay maybe a bit extreme but for something so simple it is pretty great.

2 slices of bread
Butter
Cheese (I used muenster)
2 slices of bacon
1 Over easy/medium egg (you want it runny)

Cook your eggs and bacon before hand and set aside.
Butter your bread and assemble cheese,bacon,egg. Place on griddle until bottom is brown, flip over gently and remove when opposite side is brown.

Cut in half and enjoy!

Cheese Steak Sandwiches



So I have a closet sandwich obsession.  I could live off of them and simply because I am a carb lover I could never give up bread.  This is one of our favorites because it is warm, cheesy and it has steak.  This is amazing for a quick lunch or dinner, pick your poison. 

4 hoagies
4 round steaks cut thinly 
salt and pepper
1/2 small onion sliced thin
1 cup mushrooms
1 Tablespoon Worcestershire sauce
4 slices of provolone cheese

preheat oven 350

Cook steak and sauce together until almost cooked through.  Add in onions,mushrooms, salt and pepper and cover for 10 mins under onions and mushrooms are wilted and softened.

Place steak mix into hoagie bun and top with cheese wrap tightly in aluminum foil and place into oven for 15 mins.  Take out and enjoy your cheese steak right away

Open Faced Beef Sandwich


So back when I was 16 I use to waitress for this cafe and they made the most amazing open beef sandwiches.  I would eat them when ever I got the chance, I swear diner food is the best.  So as I was making out the menu for this weeks dinner and I thought about this and realized I haven't had it since I was 18! So I thought why not.  It was moist, juicy and the taste was amazing.  Just make it and see for yourself.

Beef:
tip roast 2 lbs
1 carton of Beef Stock
1 Table Spoons Steak and burger seasoning * I use Famous Daves*
2 Teaspoons Worcestershire sauce

Put all ingredients into slow cooker at low for 6-8 hours or high for 4-6 hours.
Shred when done

Homemade Gravy:
1 Tablespoon butter
1 Tablespoon flour
1 Cup of juice from the slow cooker

Make your rue.  Melt butter is pan and mix  in flour until smooth.  Add is juice and whisk until thickens.
Double if you want more gravy

assemble with bread, roast, mashed potatoes and gravy.
