Very Simple...your family will love it trust me =)
I did serve this with carrots cucumbers and egg rolls and i doubled the sauce part of it for more flavor
Ingredients
- 1 (12 oz) box whole wheat spaghetti
- ½ c plus ¼ c Swanson 99% fat free chicken broth
- ½ c sweet potato puree
- 2 T reduced sodium soy sauce
- 1 t firmly packed dark brown sugar
- 1 t sesame oil
- 2 t cornstarch
- 2 T extra virgin olive oil
- 3 cloves garlic minced
- 4 green onions, white ends only,
- thinly sliced 4 (6 oz) center cut pork chops or cutlets, trimmed of fat and cut across grain into ¼ inch thick slices
Directions
Cook the spaghetti according to the package instructions and set aside. In a medium bowl, whisk the ½ c chicken broth, sweet potato puree, soy sauce, brown sugar, sesame oil, and cornstarch. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the garlic, green onions, and pork. Cook until the garlic and onions become fragrant and the pork begins to brown, 4 to 5 minutes.
Add the soy sauce mixture and spaghetti to the skillet. Reduce the heat to low. Cook 1 to 2 minutes more, stirring well, until a thick sauce forms and coats the noodles. Add the remaining chicken broth if the sauce is too thick. Serve immediately.

YUM! That looks great! I love the idea of the sweet potato puree. It gives my kids some added nutrients that they wouldn't normally eat!

ReplyDeleteThis looks great! I saw this on pinterest and I want to try this but was wondering about the sweet potatoe purée...do you just boil the potatoes and blend it or what?
ReplyDelete1. Peel sweet potatoes and cut into small chunks
Delete2. Place chunks into a pan with just enough water to slightly cover potato
3. "Steam" boil until tender, be sure to check on the water level.
4. Reserve any left over water to use for thinning out the sweet potatoes if desired.
5.Blend in blender or mix until mixture is smooth
