Chocolate Covered Caramels


My favorite chocolate combination is when it is paired with caramel and then top them off with pistachio crumbs it turns into a whole kind of better. This is a simple recipe that can be done within 30 minutes.

What is your favorite chocolate combination?

1 lb caramel
2 Cups dipping and coating dark chocolate 
1/4 Cup Corn starch 
1/4 Cup Pistachios *crushed*

Place Corn Starch onto your counter space to prevent sticking.
Roll out 1 pound of caramel into a rectangle about a 1/2 inch thick. Cut into strips and and cut strips into squares. Depending how big or small you want them.
Melt chocolate in double boiler and dip caramels into chocolate and place onto wax paper.
Sprinkle crushed pistachios on top or sea salt.
Place in fridge until chocolate has set.
