Pineapple Upside Down Cupcake


I love cupcakes that is that and a pineapple upside down cupcake is divine!  I actually have never ever made a pineapple upside down cake but I have made an apple one so I was kinda excited to finally make this.  It turned out great and cannot wait for the kids to come home and gobble them up!

Sugar Topping
6 Tablespoons Butter
1 Cup packed brown Sugar
2 Tablespoons Honey
sliced Pineapple
halved Maraschino Cherries

Cake
3 Eggs
1 Cup Oil
3/4 Cup Sour Cream
2 Teaspoons Vanilla
2 1/2 Cups Flour
2 Cups Sugar
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon salt

Preheat oven to 350*

Line the bottom of greased cupcake pan with waxed paper and grease well.  Place 3 pineapple slices with half cherry in the middle and set aside.

In a small sauce pan melt butter,brown sugar and honey on low heat until sugar is dissolved.  Spoon 1 tablespoon into each cupcake tin and cover each pineapple and cherry.

In large bowl beat eggs and sugar until thick and lemon colored.  Beat in sour cream, oil and vanilla until smooth.  Combine Flour,baking powder,soda, and salt and mix very well.

Fill tins 2/3rd full and bake for 30 minutes.  Cool for 5 minutes before you flip them out.
