This is a quick throw together chicken that is healthy and tastes amazing! It is fresh and juicy and creamy.
I have been cooking with spinach a lot lately. Trying to be a tad more healthy so I can fit into my wedding dress next September. Mushrooms and spinach are my favorite healthy foods. What are yours?
1 box of Chicken stock
4 Tablespoons Butter
1/4 Cup Flour
2 Cups fresh spinach
1 box of fresh mushrooms
4-6 Chicken Breasts
Preheat oven to 350*
Melt butter in pan and whisk in flour until it turns into a paste. Pour in chicken stock into mixture and whisk and let boil and turn to simmer. Keep whisking constantly
Mix in the spinach and mushrooms and pour sauce mixture into 9x13 pan. Put in chicken breasts and make sure chicken is semi covered with mixture.
Bake for 1 hour or until done.
