Healthy Lo Mein


What is better than Lo Mein?  A Healthy one!!!  That is right here is a recipe that has lower calories in a favorite Chinese dish. The thing that makes it healthy is the hidden purred veggies so the kids will enjoy it as well.

Now I do double the sauce recipe because it just gives it more flavor


    1 (12 oz) box whole wheat spaghetti 
    ½ c Swanson 99% fat free chicken broth 
    1/4 cup sweet potato puree
    1/4 Cup zucchini Puree
    2 Tablespoon reduced sodium soy sauce 
    1 teaspoon firmly packed dark brown sugar 
    1 teaspoon sesame oil 
    2 teaspoon cornstarch 
    2 Tablespoon extra virgin olive oil 
    3 cloves garlic minced
     thinly sliced 2 center cut pork chops or cutlets, trimmed of fat and cut across grain into ¼ inch thick slices

Cook the spaghetti according to the package instructions and set aside. In a medium bowl, whisk the ½ c chicken broth, sweet potato and zucchini puree, soy sauce, brown sugar, sesame oil, and cornstarch. Set aside.

Heat the olive oil in a large skillet over medium-high heat. Add the garlic, and pork. Cook until the garlic  become fragrant and the pork begins to brown, 4 to 5 minutes.

Add the soy sauce mixture and spaghetti to the skillet. Reduce the heat to low. Cook 1 to 2 minutes more, stirring well, until a thick sauce forms and coats the noodles. Serve immediately.
