Chocolate Coconut Cupcakes with 7 minute frosting

So these can I say are amazing!! My best cupcakes yet!! You will not be disappointed in these at all!  Trust me you HAVE to make them!! They are so light and moist and a bite of heaven


Chocolate Coconut Cake

Ingredients

  • 1 cup butter
  • 1 3/4 cups white sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups milk
  • 2 1/2 cups all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 Cup of sweetened Coconut 


  • Directions

  1. Preheat oven to 350 degrees F Sift together the flour, cocoa, baking soda and salt. Set aside.
  2. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. mix in your coconut flakes and Pour batter into prepared pan.
  3. Bake in the preheated oven for 20-30 minutes or until pick comes out clean

7 Minute Frosting

1 1/2 cups white sugar
1/2 cup water
3 large egg whites
1/4 tsp cream of tartar
1 tsp coconut extract

Directions:
In a double broiler (or a stove top safe glass bowl over the top of a pot of boiling water) combine sugar, water, egg whites, and cream of tartar with electric mixer and whisk attachment until combined, about 30 seconds.   Place bowl on top of pan of boiling water (water should only be about 1-2 inches deep) and beat with electric whisk attachment for seven minutes until soft peaks occur.  Remove from heat and add coconut extract.  Beat for 2 to 3 minutes or more until frosting is spreading consistency.
