Snickers Cupcake

Today is

Oh I am Back!!!!  Morning sickness if officially over thank god!
So I thought why not start over on Snack time Sunday and what is better then Snicker Cupcakes?!? The Best Ever!! Enjoy!

Chocolate Cake

Ingredients

  • 1 cup margarine
  • 1 3/4 cups white sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups milk
  • 2 1/2 cups all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt



  • Directions

  1. Preheat oven to 350 degrees F Sift together the flour, cocoa, baking soda and salt. Set aside.
  2. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pan.
  3. Bake in oven for 20 mins or until toothpick comes out clean

Caramel Buttercream
16 tbsp. unsalted butter, at room temperature
1 lb. confectioners’ sugar
1½ tsp. vanilla extract
1/3 cup caramel sauce
Pinch of coarse salt
2 tbsp. heavy cream

add the butter to the bowl of an electric mixer.  Beat on medium-high speed 1 minute until smooth.  Blend in the confectioners’ sugar until smooth, 1-2 minutes.  Mix in the vanilla, caramel sauce and salt until incorporated.  (Note: the caramel sauce should be just warm enough that it is workable, but not warm enough to melt the butter in the frosting.)  Add the heavy cream and whip on high speed until light and fluffy, about 3-4 minutes.

* When Cupcakes are done chop up one mini snickers bar per cupcake.  Take a Spoon and spoon out a hole in the middle of the cupcake and fill it with the snickers and drizzle with some caramel sauce.  Then frost*
