Orange Sweetheart Cupcakes

These cupcakes are light and amazing! It has the perfect flavor of orange nothing is to heavy with this recipe

2 1/4 Cup Cake Flour
1 1/3 Cup Sugar
1 Tablespoon Baking Powder
1/2 teaspoon Salt
3/4 Cup Orange Juice
1/2 Cup Vege Oil
1 Large Orange Grated Zest
5 Egg Yolks
8 Egg White
1/2 teaspoon Cream of TarTar

Mix Flour,Sugar,baking powder, and salt in a large bowl.  Beat in OJ, oil, Orange Zest and Egg Yolks.

With Clean Beaters and bowl Beat Egg White and cream of Tartar to stiff peaks *about 4-5 mins*

Fold into the cake batter *do not stir* with a whisk

Pour Batter into paper lined cupcake pan filling each about three quarters full

Bake at 375* until tops of cakes Spring Back when lightly touches for about 15-20 mins

Cool on Wire racks and frost with Frosting.

Orange Butter cream Frosting 
3/4 Cup Sugar
3 Tablespoon Cornstarch
1/8 teaspoon Salt
2 Egg Yolks
1/2 teaspoon Orange Extract
20 tablespoon Butter *2 1/2 sticks*
1 Cup Powdered Sugar

Mix Sugar, Cornstarch, and Salt into sauce pan and mix in OJ and heat to a boil whisking constantly until thickened about 1 min.

Gradually whisk mixture into egg yolks and return to sauce pan and whisk over low heat for 1 min and put mixture into a bowl.

Let stand and get cool.  Once Cool stir in Orange Extract

Meanwhile beat butter in a separate bowl until fluffy then beat in OJ Mixture and Powdered Sugar
*the frosting is some what orange from the OJ but i wanted a lil more so i added 10 Yellow drops and 1 red drop*

Decorate the way you want ENJOY
