How to make perfect french fries

There is a trick to making the perfect fry, you cannot just throw them in the oven or throw them in oil no no no.  Follow my steps to creating the crunchy and soft perfectly brown french fry.

Cut up 5 potatoes or how many you think you will need, peel or not to peel that is your decision.  Cut potatoes in half (long way), cut into fours (long way) and then cut those in half (long way again).

Place all fries into water and let soak for 2 hours or over night.

Dry off fries with paper towel.

Bring Oil to 300* Par fry the french fries to the point before they turn brown (you do not want them brown yet) which will take between 3-5 minutes.  Take out and drain on paper towel.  When you get all the fries done turn up the heat and get oil to 400*

Place french fries back into oil for 1-2 minutes until they are brown.

Drain on paper towel, salt and enjoy the perfect crunch

Wonder Pot

What the heck is a wonder pot you ask?  Well the most amazing pasta dish ever!!  Not kidding, this is going on our weekly menu.  The whole family ate this in 5 minutes it is just that crazy good.  It is so fresh and you all make it in one pot!  You cannot beat that.

So yes this is going to be a side dish ever week until we all get sick of it but I don't think we ever will.

4 cups vegetable broth
2 Tbsp olive oil
12 oz. fettuccine
8 oz. Fresh spinach leaves
1 (28 oz.) can diced tomatoes
 3 cloves garlic (minced)
 ½ Tbsp dried basil
½ Tbsp dried oregano
 1 tsp red pepper flakes
2 oz. feta cheese

Add four cups of vegetable broth to a large pot. Break the fettuccine in half to make stirring easier later, and then add it to the pot. Also add the canned tomatoes (undrained), olive oil, fresh spinach, garlic (minced), basil, oregano, and red pepper.

Make sure the ingredients are submerged under the liquid it is ok if some is sticking out.  Turn heat on high until boil.

Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. The pot must be boiling the entire time.

After the pasta is cooked, crumble the feta cheese over top and serve.

Classic Macaroni Salad

There are two things I could live off of in life and that is pasta salads and sandwiches.  I am in love with both and nothing is better than a classic macaroni salad.  It goes amazing with anything or just by itself and great for potlucks!  So here is my version of the macaroni salad

2 cups cook elbow macaroni
2 cans tuna
1 Cup peas
5 hard boiled eggs, chopped
1 1/2 cup Mayo
1 Tablespoon Mustard
Salt and pepper to taste

Cook macaroni until done as box directs, drain and put into large boil.  Put all seven ingredients into bowl and mix well.  Put into fridge for 2 hours or until cold.

Potato Stacks

I love these little things. I always like having different side dishes rather than the fries or baked potatoes with our steak so I created this little number and they turned out great.  Crunchy at the bottom and top and very soft is the middle with great taste! Plus they went amazing with steak.

6-8 Tbsp. of butter
1 1/2 lbs Yukon Gold potatoes or any potatoes you have
Salt and pepper to taste
2 Tablespoons Fresh parsley
Small clove garlic, minced

Preheat oven to 375
Cut the potatoes in thin slices and put them into a bowl.  Melt your butter and mix in spices and mix the butter mixture in potatoes until well coated.  Put rounds into muffin pans and put into oven for 30 minutes or until browned

Cheesy Hasselback Potatoes

So I have seen these on Pinterest more then a dozen times they go from simple to kinda complicated.  I couldn't find one I specifically liked I mean I did like them but to me it was to many ingredients for something so simple.  So here is my version of the cheesy hasselback potatoes.

4 med potatoes
1/2 stick butter melted
salt and pepper
thin cubes of cheese * I used block coby jack*

Preheat your oven to 400*
Slice your potatoes in rounds but not all the way through you still want the rounds attached
pour your melted butter over potatoes even and put salt and pepper on it per your taste
Put into oven for 40 mins or until done

When done take out and thinly slice your cheese and then cut in half.  Place cheese in every other layer of potato round and put back into oven until melted
