Apple Scone


Happy St. Patrick's Day!
How about a wonderful, simple breakfast for the morning of? This recipe is so simple and quick to make for a delicious breakfast to go along with that cup of tea. The light taste of apple and a hint of cinnamon will brighten up anyone's day. So when you think of St. Patrick's Day don't just think of corned beef, beer, and potatoes, think of this amazing little breakfast to start your day off perfect.

Ingredients: 
2 3/4 Cups Flour
1 1/4 Teaspoon Baking Powder
3 Tablespoons Butter
3/4 Teaspoon Salt
2/3 Cup Milk
2 1/2 Tablespoons Sugar
1 Egg, beaten
1 Cup grated Apple

Topping
2 Teaspoon Melted Butter
Granulated Sugar

Directions:
Preheat oven to 450*
Butter and flour 9x9 square baking pan
Sift flour, baking powder, and salt into a large bowl.
Blend in room temperature butter and then mix in sugar.
Beat egg into milk and add in grated apples. Mix gently into flour mixture until fully mixed. 
Spread dough onto your greased 9x9 pan and bake for 25-30 minutes. 
Place onto a cutting board and spread melted butter on top and sprinkle as much sugar as you please 
Cut into 9 sections and serve warm

English Muffin Bread


You heard me  and say it with me, English Muffin Bread.  Who has ever heard of such an amazing thing!  I might be making this all the time because well it is just great. It tastes exactly like an English muffin but this is just bigger and better and it just tastes really good.  So if you like English muffins this is a must make and you will not regret it. Ok you might regret it after you eat half the loaf in a deal but I am not here to judge just here to support.  Don't forget to toast the bread slices 

Ingredients
3 Cups Flour
1 Tablespoon Sugar
1 Teaspoon Salt
1/4 Teaspoon Baking Soda
1 Package Instant Yeast
1 Cup Milk
1/4 Cup Water
2 Tablespoons Vegetable Oil
**Cornmeal
**Butter

Preheat oven 400*
Whisk together flour, sugar, salt and baking soda in a medium bowl.
Combine the milk,water, oil and yeast into a microwave safe bowl and heat for 2-3 minutes or until it is a little hotter than luke warm.

Pour hot liquid over the flour mixture and stir  until blended, the dough will be very soft.
Grease a bread loaf pan with butter and place corn meal over it.  Put dough into pan, cover and let rise for 1 hour.

Bake for 20-25 minutes or until the top is golden brown. 
Let sit until cool and enjoy!

Lemon Loaf

My favorite flavor ever is Lemon.  Lemon pie, lemon chicken, lemon cookies, lemon bread....everything lemon is great.  I was in the mood to bake and the kids wanted a snack and I have made so many cookies and brownies every week I decided to make them something different and they loved it. This bread is great to make for the summer time and will be a hit no matter where you bring it or leave it.  The sweet hint of lemon in the bread with a lemon glaze will win anyone over.

Ingredients

**Bread**
1 Stick butter, softened to room temp 
1 Cup of sugar
2 eggs
4 Tablespoons Lemon Juice
1 1/2 Cup flour
1 Tsp Baking Powder
1/8 Teaspoon Salt
1/2 Cup Milk

**Glaze**
1 1/2 Cup Powdered Sugar
3 Tablespoon Lemon  Juice

Instructions 

Preheat oven to 350*
Mix butter and sugar together until blended, add in eggs one at a time and mix until well blended, stir in lemon juice.  In separate bowl slightly mix flour, baking powder and salt and mix well into lemon batter, slowly mix in milk until mixed well.

grease and flour bread loaf pan and pour in batter.  Bake for 45 mins or until knife comes out clean.

When bread is done take a tooth pick and place prick the  hot bread multiple times and add in 1/2 cup of the glaze over the bread and let sit and sink into the bread until cool.  When cool add on the rest of your glaze.

**Glaze**
Mix sugar and juice together and let sit until ready to use.

Breakfast Banana Split


A good morning breakfast is hard to come by especially when you get stuck in the same routine.  So I decided to surprise my girls with something different and healthy before they went in for their STAR state testing.  So here is the new and improved banana split, the healthy way.

1 Banana
Blueberries (or berries of your choice)
2 scoops of frozen greek yogurt 
Granola

Just place it all together and you are set.

Soft Bread Sticks


Looking for an amazing recipe for breadsticks?  Stop right here because these are to die for.  They are soft with an great flavor of garlic and Italian herbs.  You, your family and even guests will not be disappointed in these. 

It is a yeast recipe so make sure you have the time to make them  and to let them rise.  I am not even allowed to buy breadsticks anymore, my family is addicted.  So make them you will not be sorry.

Makes 12


For dough:
1 cup warm water
1 packet of quick rising yeast 
2 tablespoons granulated sugar
3 tablespoons unsalted butter, melted
2 teaspoons salt
3 cups all purpose flour

For topping:
4 Tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning


Instructions:

In bowl add in water and yeast, mix and let sit for 5 minutes.  Then add in that bowl your sugar, butter and salt and mix.  Add in flour 1 cup at a time and knead dough for 5 minutes or until smooth

Place dough is greased bowl, cover with towel and let set in warm place for 2 hours. 

Divide dough into 12 portions and roll each one out about 6 inches long or how ever long you would like them.  Place on cooking sheets and let rise for 1 hour.

Preheat oven to 400* and bake for 10 minutes or until tops are brown.

While your breadsticks are baking make your topping, mix ingredients together.

Remove breadsticks and brush on butter topping, serve warm.

Honey Buttermilk Bread


This bread is perfect, full of flavor and just enough sweetness.  It has the perfect touch of honey and my family cannot get enough.  Eat alone, with butter or better yet make me a sandwich....errrr I mean make your self a sandwich!  Please excuse me, I am hungry.

1 Packet of yeast
1/4 Teaspoon powder ginger
1 Teaspoon Sugar
1/4 Cup Warm Water
2 Cups Buttermilk
1/3 Cup Honey
3/4 Teaspoons Baking soda
6 Cups Flour
1/4 Cup Butter *melted*

Preheat your oven to 400*

Mix yeast, ginger, sugar and warm water, mix and let sit for 5 minutes.

In the mean time Wisk buttermilk, honey, salt and baking soda in different bowl and add to the yeast mixture.

Add 3 cups of flour (one at a time) and mix until smooth, add in your melted butter and add in the rest of the flour.  Mix until dough is pulling from the sides of the bowl.

Take out and knead for 5 minutes.  Place in greased bowl in warm place and cover for 1 1/2 hours.

Punch down into two loafs, grease and cover loaf pans for 45 minutes.

Bake for 3 minutes (if you fear the top getting to brown cover with foil)

Remove from oven and brush with butter.  Let cool and remove from pans.

Red Lobster Cheddar Bay Biscuits


The best biscuits your taste bud laid buds on, ever.  This copy cat recipe will be worth the craving and skipping that trip to red lobster.  It is so simple and quick your friends and family will thank you.

Makes 12

2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
2 teaspoons garlic powder
1/2 teaspoon kosher salt
1 cup buttermilk
1/2 cup unsalted butter, melted
1 1/2 cups shredded sharp cheddar cheese

For the topping
3 tablespoons unsalted butter, melted
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon garlic powder

Preheat oven to 450 degrees F. 
In a large bowl, combine flour, sugar, baking powder, garlic powder, salt and cayenne pepper, if using.
In a large glass measuring cup or another bowl, whisk together buttermilk and butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Gently fold in cheese.
Using a 1/4-cup measuring cup, scoop the batter evenly onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown.
For the topping, whisk together butter, parsley and garlic powder in a small bowl. Working one at a time, brush the tops of the biscuits with the butter mixture.
Serve immediately.

Spiral Apple Bread


So like any bread making this is a process a slow amazing process.  The smell of anything bread,apple and cinnamon is absolutely perfect even if it is in the summer.  This recipe makes 2 and they didn't even last more than 10 minutes.  This will become a regular for sure.

Bread
2 cups all purpose flour
3/4 cup milk warmed
2 tablespoons unsalted butter melted
2 tablespoons sugar
1 1/2 teaspoons instant yeast
1/2 teaspoon salt
3 whole apples peeled, cored and sliced
1/4 cup unsalted butter
1/4 teaspoons cinnamon
1/4 cup sugar

Topping
1/2 Cup Butter
2 Teaspoons Milk
1/2 Cup Brown Sugar

Bread
Place flour, sugar, salt, cinnamon, and yeast in a stand mixer with the dough hook attached. Stir to combine.
In a small bowl add your melted butter into your warm milk. Then, with the mixer on low, add this mixture to the flour mixture until it forms a soft dough ball.
Knead with the mixer for about 4 minutes. Then transfer dough into a lightly oiled bowl. Cover loosely with plastic wrap. Let rise in a warm area for 1.1/2 hours or until doubled in size.
Punch dough down then divide into 2 balls. On a lightly floured surface, roll out each ball into an approximately 8 x 11-inch rectangle. Cut into 9 strips.
Lightly grease an 8- or 9-inch round pan. Starting at the center of pan, coil apple slices with dough strips into a spiral, pinching ends securely as strips are added.
Repeat the same steps for the other half of the dough. Cover loosely with plastic wrap and let rise for 45 minutes. Toward the end of rising time, preheat oven to 350 degrees F.
Bake for 20-25 minutes until golden brown. 
For the sprinkle topping, mix cinnamon and sugar together in a small bowl. Once the bread is removed from the oven, brush each loaf with melted butter and then sprinkle with the cinnamon and sugar mixture. 

Topping
Make the glaze by heating the butter, milk and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar, then remove from the heat. Drizzle over the warm cake.
Serve warm and cut into wedges

Garlic Pull Apart Bread


Oh how I love any flavor of pull apart bread, there is so much you can do with it.  This time I found this great recipe that I couldn't resist to try.  I did add my own to it because it was a little bland to our taste buds the first round so I made it again and added my own little touches and the load was gone in just one night.  Just like any other bread, take your time with it and treat it with care.  

3 1/2 Cups Flour
1 Tablespoon Sugar
1 Package of yeast
1 1/2 Teaspoon Salt
1/2 Teaspoon Thyme
2 Tablespoons Basil *divided*
8 cloves garlic *divided and minced*
2 Tablespoons Garlic Powder *divided*
2 Tablespoons Olive Oil
1/4 Cup Milk
1 Cup plus 2 Tablespoons Warm water
4 Tablespoons Butter *melted*
8 Tablespoons Parmesan Cheese

Preheat oven 350*

Mix water and yeast together in a bowl.  In another bowl mix together flour,sugar,salt,thyme,1 Tablespoon of Basil and 2 cloves of garlic.

While the mixer is on low add in oil,milk and water mixture, increase speed and keep mixing until dough pulls away from bowl and shape into a smooth ball.

Transfer dough into greased bowl, cover and put into a warm place and wait until it doubles in size, around 2 hours.

Roll out dough to a 12x20 rectangle.  Mix 3 tablespoons of melted butter and 1 1/2 Tablespoon garlic powder and brush onto dough.  Sprinkle remaining basil, 6 cloves of garlic and Parmesan cheese.

Carefully cut into 6 strips, layer strips on to of each other and cut into 6 stacks. Transfer dough squares into lightly greased bread loaf pan.  Cover loosely and let sit for another hour.

Mix last tablespoon of melted butter and 1/2 teaspoon garlic powder and pour onto op bread loaf.  Bake for 35 minutes.

Banana Bread


Banana bread is my comfort food.  It is my go to bread when I am in the mood for something delicious.  You have to try this bread and make it permanent.  It is nothing but moist and delicious! 

2 Eggs Beaten
1/3 Cup Milk
1/2 Vegetable Oil
1 Cup Mashed Bananas
1 1/2 Cup Sugar
1 3/4 Cup Flour
1 Teaspoon Soda
1/2 Teaspoon Salt
1/2 Cup Walnuts Chopped *Optional*

Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
Blend together the eggs, buttermilk, oil and bananas.

Sift together the sugar, flour, baking soda and salt. Add to banana mixture and stir in pecans. Mix well.

Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.

Cinnamon Roll Cake


So every Christmas we have our annual Cinnamon Roll Cake and it never fails.  Pair it up with some fresh fruit and some OJ and it is the perfect Christmas breakfast.  My house is now quiet with kids watching a movie and some popcorn and we ate our Christmas turkey around 2. Everyone have a great Christmas and maybe next year or this year enjoy a Cinnamon roll cake!

Cake
2 3/4 Cups Flour
3 Tablespoons Sugar 
1 Teaspoon Salt
1 Package Yeast
1/2 Cup Water
1/4 Cup Milk
3 Tablespoons butter
1 Large Egg Room Temp

Filling
3 Tablespoons Butter Room Temp
1 1/2 Tablespoons Cinnamon
1/4 Cup Sugar

Icing
2 Ounces Cream Cheese softened 
7 Tablespoons Butter Softened
1/2 Teaspoon Vanilla
2 Tablespoons Milk
1/4 Teaspoon Salt
1 1/2 Cups Powdered Sugar

Make the dough: Set aside 1/2 cup of flour. In a large bowl, toss the 2 and 1/4 cups flour, the sugar, salt, and yeast together until evenly dispersed. Set aside.

Heat the water, milk, and butter together in the microwave until the butter is melted and the mixture is hot to touch. About 115-120F degrees. Stir the butter mixture into the flour mixture. Add the egg and only enough of the reserved flour to make a soft dough. I only needed 1/3 cup, but you may need the full 1/2 cup. Dough will be ready when it gently pulls away from the side of the bowl and has an elastic consistency.

On a lightly floured surface, knead the dough for about 3-4 minutes. Form a ball and place in a lightly greased bowl (I used non-stick spray). Cover tightly and let rest for 30 minutes. The dough will slightly rise.

Make the filling: After 30 minutes, roll the dough out in a 15x12 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough. Spray a 9-inch round pan with nonstick spray. Set aside.

 Using a very sharp knife or a pizza cutter (I used a pizza cutter - it's easiest), cut the dough into six 2-inch wide strips. Loosely roll up one strip and place it in the center of the pan. You're rolling it up loosely so the dough has some give as it rises. Coil the remaining 5 strips around the center roll, starting each strip at the end of the previous one to make one large rolled cake. Some of the filling may spill out as you pick up the strips, but I just sprinkled that on top of the cake after I was finished spiraling.

Loosely cover the cake with aluminum foil or plastic wrap and allow to rise in a warm, draft-free place for 60-90 minutes. Here is what I do: heat the oven to 200F degrees. Turn oven off. Place cake inside oven and allow to rise. My cake took the full 90 minutes.

After the cake's dough has nearly doubled in size, preheat the oven to 350F. Bake for 30-35 minutes until lightly browned. I covered the rolls with aluminum foil after 15 minutes to avoid heavy browning. *While the cake is baking, some spots may rise up more than other spots. That's completely normal and well, quite expected! I simply removed the pan from the oven and pressed down on the sides with the back of a spatula that were rising more than others.

Make the glaze: Remove cake from the oven when it's done. Allow the cake to cool for about 10 minutes. Then, right before serving, drizzle with glaze. Beat cream cheese and butter together until creamy.  Mix in vanilla and milk then add in sugar little at a time until fully mixed well.
Cake is best enjoyed the same day, but will remain fresh covered tightly for up to 4 days at room temperature or in the refrigerator.

Classic French Toast


Who doesn't love french toast?  Nobody unless you are a freak.  I am totally kidding by the way. Kinda
I know everyone does their french toast different and one day I threw it all together and all I get are compliments on them.  Sunday night in our house is breakfast night. We are not a family of breakfast eaters so we invited a breakfast night!  I made them fresh late this morning though so I could get good pictures and then Lolo and I shared.

6 Eggs *whisked*
1 tablespoon milk
1 table spoon vanilla 
1 tablespoon cinnamon 
10 Slices of Texas Toast

Mix first 4 ingredients together and dip in your bread until it is fully soaked and cook on griddle until brown.

Top with whatever fits your fancy.  Mine is butter, powdered sugar and syrup.
